The soft grains make a good alternative for typical salad carbs like pasta, while also making the dish more satiating. This is a great, quick recipe for weekly meal prep.
You’ll need:
250 ml Couscous of your choice
1 x 400 g Tin Peas
150 g Bacon Bits
60 g Tendril Leaf Pea shoots
40 g Parmesan, grated
Dressing:
45 ml Olive Oil
30 ml Lemon Juice
5 ml Honey
5 ml Dijon Mustard
Salt & Pepper to taste
Instructions:
Cook couscous according to instructions on the packaging.
Rinse the couscous and spread it out in your salad bowl to dry (prevent it from sticking together).
Heat a pan on medium heat and fry the bacon bits until golden and crispy. Let it drain on a paper towel.
Assemble the salad in the following order: Pea Shoots, couscous, peas, bacon, parmesan. Pour over the dressing and toss the salad lightly to mix everything.
