Couscous Salad with Pea Shoots & Parmesan

This can be a colourful and hearty side dish or a light main course. This vibrant dish is packed with interesting textures, lovely flavours, resulting in a salad that is an absolute joy to eat. It’s fresh, healthy, delicious, super easy, and fast to prepare. We all love a good couscous salad. The soft grains make a good alternative for typical salad carbs like pasta, while also making the dish more satiating. This is a great, quick recipe for weekly meal prep.

You’ll need:

  • 250 ml Couscous of your choice

  • 1 x 400 g Tin Peas

  • 150 g Bacon Bits

  • 60 g Tendril Leaf Pea shoots

  • 40 g Parmesan, grated

Dressing:

  • 45 ml Olive Oil

  • 30 ml Lemon Juice

  • 5 ml Honey

  • 5 ml Dijon Mustard

  • Salt & Pepper to taste

Instructions:

  1. Cook couscous according to instructions on the packaging.

  2. Rinse the couscous and spread it out in your salad bowl to dry (prevent it from sticking together).

  1. Heat a pan on medium heat and fry the bacon bits until golden and crispy. Let it drain on a paper towel.

  1. Assemble the salad in the following order: Pea Shoots, couscous, peas, bacon, parmesan. Pour over the dressing and toss the salad lightly to mix everything.
