This gorgeous green fritter recipe is sneakily stuffed with greens so that picky eaters can’t find them! Fritters are so versatile; any leftovers can be given a second life in fritter-form. I love these green fritters because they are full of vitamins, minerals, and micro-nutrients, thanks to the addition of our radish microgreens.
They are great as a snack, lunchbox treat, or side to your dinner, they are quick to make and deliciously wholesome! You can add or change veggies as you have left-over in the fridge, but the combination of spinach and baby marrow is a winner for me. The radish microgreens are crunchy and flavourful, and look incredibly pretty once fried into these veggie nuggets of gold!
You’ll need:
· 2 cups spinach, finely shredded
· 4 baby marrows, grated
· 1 cup New Life Microgreens Radish Mix
· 2 cloves garlic, minced
· 1/4 cup parmesan cheese, grated
· 1 large egg
· 1/4 cup all-purpose flour
· salt and pepper, to taste
· olive oil for frying
· lemon wedges, for serving
Instructions:
· Mix all the veggies together in a bowl. Add egg and mix through. Add flour until you have a thick-ish paste. Add salt and pepper to taste.
· Heat olive oil in a non-stick pan over medium heat. Scoop tablespoons full of mix into the pan and flatten with the back of the spoon, making sure they are compact and not “cracking.”
· Slowly fry until golden brown. Flip once and drain on a paper towel.
· Serve with more radish microgreens and lemon wedges.
· Use fresh garlic – the garlic you get pre-packed in the tubs is too strong for the fritters and will overpower the rest of the ingredients.
· You can use any other type of hard cheese, like pecorino, if you don’t have parmesan.
· Don’t be shy with the black pepper! It really adds a lovely zing to the fritters. Enjoy!
