Have you ever heard of popcorn ice cream? Well, now you have! And it is delicious. Super easy and the perfect recipe for your little one to make – especially when they’re in the mood for something sweet and have Popcorn Microgreens that are ready to be harvested.

You’ll need:

· 1 Tin Ideal Milk (380g) – refrigerated overnight
· 30 ml Castor Sugar
· 5 ml Vanilla Essence
· 5 ml Gelatine (Dissolved in 30 ml water)
· 500 ml Popcorn Microgreens
· 1 ml Green Food Colouring (Optional but adds a nice pop of colour)

Instructions:

1. In a blender add the refrigerated Ideal Milk and popcorn Microgreens. Blend until Microgreens are roughly chopped and well mixed with the ideal milk.
2. Add the ideal milk mixture into the bowl of an electric mixer and beat on low for 5 minutes.
3. Add the rest of the ingredients, beat for another 10 minutes.
4. Scoop the mixture into a loaf tin or freeze-proof container, cover with cling-wrap and freeze overnight.
